Shrimp Pad Thai

Ingredients
4oz. Stir-fry dry noodles
1/4 cup of ketchup
2 tbsp. lime juice
1 tbsp. pure maple syrup
1 clove or 1 tbsp of garlic
1/4 tsp. ground paprika
1 tbsp. & 1 tsp. avocado oil
8oz. raw shrimp, peeled and deveined
1 bag of tri-colored coleslaw
1/4 cup sliced green onions
4 large eggs, beaten
roasted peanuts, chopped
2 tbsp. fresh cilantro
peanut sauce (optional)
Directions
* Cook noodles according to the package.
* Add ketchup, lime juice, maple syrup, garlic, & paprika to a bowl; whisk to combine. Set aside.
* Preheat a large nonstick skillet over high heat; add oil. Add shrimp and cook for 1 minute. Flip and then push it to the edge of the skillet.
* Add your bag of mixed coleslaw and green onion; cook and stir frequently, about 3 minutes. Push to the edge of the skillet.
* Add your beaten eggs and scramble for about 2 minutes. Push to the edge of the skillet.
* Add your cooked noodles and sauce to the skillet. Mix everything together and cook for another 2 minutes.
* Remove skillet from heat; top with peanuts, cilantro, and your optional peanut sauce. Enjoy!
